喜欢吃包子吗?在市场营销中包子也受到危机感。
北方包子杭州受挫    当杭州某大酒楼创下日销包子一万多个的新纪录时,杭州市场营销令一家包子店(天津某餐饮集团在杭州开设的分店)却将楼下2/3的营业面积出让给某一服装企业。尽管营业面积已缩小,但该店经营依然惨淡,生意日渐衰退。
    天津某餐饮集团所拥有的包子品牌也是一个百年老字号,在国内赫赫有名,尤其在我国北方更具号召力,但它为何在杭州受到冷遇呢?
    该包子店地处杭州商业黄金地段,包子当然正宗,并以其鲜明的特色(薄皮、水饺、滋味鲜美,咬一口汁水横流)亨誉神州。值得指出的事该包子店在杭州受挫的原因恰恰就是它自身的鲜明特色。
    首先,该包子不合杭州市民的口味。这种包子馅比较油腻,而杭州市民大多口味清淡因此很少有人将包子作为经常性快餐食品来享用。
    其次,该包子不合杭州人的生活习惯。北方人把包子作为主食,而杭州人把包子当作一种便捷的快餐对待,为赶时间,往往边吃边赶路,即使不赶时间,也有边吃边逛的习惯。而这种包子由于水馅、薄皮,咬则流汁,所以不能拿在手里吃,只能坐下来,用筷子夹着吃。
    与这种北方包子形成鲜明对比的是杭州某大酒楼的“南方大包”。这种大包只是把以往的做法发展一下。面粉全用进口的紫兰花粉,改进了发酵工艺,馅料做点改动,效果却出乎意料地好,深受杭州广大消费者欢迎,甚至引得顾客排长对购买。为了进一步适应市场需要,南方大包生产中心还根据不同时令、不同消费层次,推出了不同规格的系列品种,创新了一批小型化的点心品种,成为各宾馆、饭店、酒家、家庭的新选择。经过几年的发展,“南方大包”以统一配方、统一标准、统一价格为基本要求,在杭州发展了百余家销售点,在全国各地发展联营企业达20多家。
